[Wellness Wednesday] Healthy Recipe: Layered Mediterranean Dip

Happy Wednesday everyone, and welcome back to Wellness Wednesday!

As I mentioned in my post Football, Food, and Fibromyalgia, my husband and I love to watch football and eat snacks whenever one of our teams is playing. A lot of our snacks would NOT be considered healthy by any stretch of the imagination, but I do try to come up with some ideas to help us balance things out.

Quite a while back I saw a recipe for a layered dip using Mediterranean flavors, but I couldn’t remember where I had seen it so I decided to come up with my own. Not only does it taste good, it provides protein, calcium, and all the goodness of vegetables.

I served this with gluten-free pitas, warmed and cut into wedges, and fresh vegetables: cucumbers, celery and carrots, but it would probably be good with lots of other veggies too.

Ingredients:

1 – 10 oz. container hummus (plain)

Tzatziki – See recipe for this below

1/4 – 1/2 cup chopped roasted red pepper

1/4 cup Feta cheese

Small can sliced black olives

1 1/2 cups lettuce, chopped

1 tomato, chopped

For Tzatziki

2 – 6 oz. containers Greek yogurt

1 1/2 Tablespoons (or 4 1/2 teaspoons) fresh dill, finely chopped

1/2 English cucumber, grated

1 clove garlic, minced

2 teaspoons lemon juice

Directions:

Make Tzatziki: Stir together yogurt, dill, grated cucumber, garlic, and lemon juice until well-mixed. Refrigerate until ready to use. (Making this ahead of time gives the flavors a chance to meld together and saves a lot of time when assembling the dip.)

Make the dip:

Layer ingredients in the following order in serving dish:

Hummus

Tzatziki

Roasted red peppers

Black olives

Feta Cheese (You may want to reserve just a little to sprinkle on top)

Lettuce

Tomato

 

Serve with your choice of fresh vegetables and/or pita chips or warm pita wedges.

Fills an 8-inch round serving dish.

 

It may be obvious that I’ve never written a recipe before, so I apologize in advance if any of the directions are confusing. If they are, please let me know so I can clarify it.

    Haven’t seen you in a while. The recipe sounds great!
    Fruit chips are our favorite, slicing seasonal fruit into thin wedges, arrange on a plate. For a special touch add some small cubes of tasty cheese, rice crackers & dates. Yum!
