What’s Your Favorite…. 2/2/18

I’m sorry if I missed some of your fabulous blog posts this week. I’ve had an issue with my eyes and have seriously had to limit my screen time. I’m going to try to catch up over the next few days.

Since my post yesterday talked about keeping track of what we’re eating, my thoughts turned to food. Big surprise there, huh? My husband says I’m the only person he knows who starts planning the next meal as I finish eating one….

Anyway….Your question for this week is:

What’s your favorite quick and easy meal?

This doesn’t count the ones you pick up from the drive-thru. :o) Please tell us your go-to meal when you need something that will only take a little time and effort to prepare. If you have a recipe you want to share, please feel free to!

    1. Thanks for sharing Lisa! I suspect spaghetti is one that a lot of us have as a go-to. Like you said, it’s so easy, and you have the option to “amp it up” with more veggies, etc. – Sometimes if I have leftover roast veggies I purée them and add them to the sauce. Have a wonderful weekend!

  1. I often put chicken in the crock pot and shred it. You can freeze some of it too. But then I can use it for chicken tacos, enchiladas, BBQ chicken sandwiches, chicken Cesar salad, etc. I will toss the chicken in on low overnight with basic seasonings and figure out the rest from there. If I’min spinach, getting rotisserie from the grocery is great too.

  2. Another favorite is omelette or a simple egg bake. Especially if you have a little leftover sautéed veggies and meat (chicken/ham/etc). For our family of 6 (4 boys, 3 are teens) we often have some left over veggies, but not enough for a meal side. I will also throw leftover wild rice or potatoes in too. They think you slaved, but its really whipping up the eggs and seasoning and putting them over leftovers in a pan and baking.

    1. Thanks for sharing Ellie! I’ve only had my Instant Pot for a few months but I love it. I’m not using it to its full capacity yet, I’m sure, but I’m learning.😊 I haven’t cooked cabbage in it yet, so maybe that will be next…. Have a great weekend!

  3. I will always cook extra rice when I make it and then chop up some veg and do fried rice for dinner, maybe throw in some pre-cooked chicken. We’re all about easy here. Another favourite is pasta with sauteed cherry tomatoes, garlic, spinach in oil and balsamic with a sprinkle of parmesan.

  4. I’d perhaps say stir fry (though the thought of it makes me sigh because it always feels like a lot of time and effort and pans, but in reality it’s very quick). Chopping things like peppers and onions takes the longest but you needn’t do too much if you’re short on time. Boil the noodles, put some chicken pieces or quorn pieces (which I’ve found cook quite well and are high in protein, as well as being easy to digest with a stoma) in a wok, add the noodles when they’re done, then veggies/salad items and beansprouts, turning it all in a little soy sauce. Yum!! 🙂

    1. Thanks for sharing Caz! I love stir-fries as well. You have a lot of different options and it’s quick. Yours sounds yummy! As far as my favorite, it’s hard to choose just one, but it’s probably salmon with either polenta and sautéed spinach or sweet potato fries and steamed broccoli with lemon butter. I may have some new favorites now that I’ve seen everyone else’s answers.😊 Have a fabulous weekend!

Anything pasta related, but I would say the quick spaghetti with premade sauce etc. Although the hubby and I want to really try my dad’s homemade spaghetti which takes more work and you have to like simmer it all afternoon for it to be really good. Spaghetti done right is not really quick. lol The cheating way to make spaghetti is quick and easy though. 🙂 So I will go with that since I LOVE anything pasta. Sloppy joes is something else we have often enough, though messy and maybe not the healthiest, but is probably the quickest meal we make next to KD, soup etc.

    1. Thanks for sharing! I make what we call “cheater spaghetti” when I need to get something made quickly. I use the sauce in a jar and put a pound of browned ground beef in it. It makes enough for two or three meals. Like you said, the real stuff takes a while….😊 Have a wonderful weekend!

  6. I make gf hamburger patties & freeze them individually, so when I need a quick meal I take the them out, quick defrost in microwave & wack them on the grill, while they cook, I start putting salad (which I always have handy) on gf rolls/toast.
    Quick, easy & delicious!

  7. Chopped salad … lettuce, onion, tomato, cucumber, olives, banana peppers (mild) with poppy seed dressing. My salads are chopped with a Subway like double blade chopper (amazon). Quick, easy and very tasteful. g
